Tuscan Chicken Pasta

Tuscan Chicken Pasta Recipe


Ingredients:


**For the Chicken:**

- 500g (1 lb) boneless, skinless chicken breasts, sliced into thin strips

- 1 teaspoon Italian seasoning

- 1 teaspoon garlic powder

- 1 teaspoon onion powder

- Salt and pepper to taste

- 2 tablespoons olive oil


**For the Pasta:**

- 300g (10 oz) pasta (penne, fettuccine, or your favorite type)

- Water for boiling

- Salt for boiling water


**For the Sauce:**

- 2 tablespoons butter

- 4 cloves garlic, minced

- 1 cup heavy cream

- 1 cup chicken broth

- 1/2 cup grated Parmesan cheese

- 1 teaspoon Italian seasoning

- 1 cup sun-dried tomatoes, chopped (oil-packed, drained)

- 2 cups fresh spinach, roughly chopped

- Salt and pepper to taste


**For Garnish:**

- Fresh basil, chopped

- Additional grated Parmesan cheese


#### Instructions:


1. **Cook the Pasta:**

- Bring a large pot of salted water to a boil.

- Add the pasta and cook according to the package instructions until al dente.

- Drain the pasta and set aside.


2. **Prepare the Chicken:**

- Season the chicken strips with Italian seasoning, garlic powder, onion powder, salt, and pepper.

- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

- Add the seasoned chicken strips to the skillet and cook for 5-7 minutes, or until fully cooked and lightly browned.

- Remove the chicken from the skillet and set aside.


3. **Make the Sauce:**

- In the same skillet, melt 2 tablespoons of butter over medium heat.

- Add the minced garlic and sauté for about 1 minute until fragrant.

- Stir in the heavy cream and chicken broth, and bring to a simmer.

- Add the grated Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce is smooth.

- Add the chopped sun-dried tomatoes and spinach to the sauce, cooking until the spinach is wilted.

- Season with salt and pepper to taste.


4. **Combine Everything:**

- Add the cooked pasta and chicken back to the skillet with the sauce.

- Toss everything together until well combined and heated through.


5. **Serve:**

- Divide the Tuscan chicken pasta among four plates.

- Garnish with freshly chopped basil and additional grated Parmesan cheese.
