Ingredients:
- 3 lbs cooked lobster meat, chopped into bite-sized pieces
- 6 brioche rolls
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons finely chopped fresh chives
- 2 tablespoons finely chopped celery
- 1 tablespoon finely chopped fresh parsley
- Salt and pepper to taste
- 2 tablespoons unsalted butter, melted
- Optional: Bibb lettuce leaves for serving
Instructions:
1. **Prepare the Lobster Filling**:
- In a large bowl, combine the chopped lobster meat, mayonnaise, lemon juice, lemon zest, chives, celery, and parsley.
- Season with salt and pepper to taste.
- Mix gently until all ingredients are well combined. Chill in the refrigerator for at least 30 minutes to let the flavors meld.
2. **Prepare the Brioche Rolls**:
- Slice the brioche rolls lengthwise, being careful not to cut all the way through.

- If using, place a Bibb lettuce leaf inside each toasted brioche roll.
- Fill each roll with the chilled lobster mixture.

- Serve the lobster rolls immediately, with additional lemon wedges on the side if desired.
